EASIEST CAMP OVEN CASSEROLE

Is there anyone who doesn’t love a hearty camp oven casserole when they’re camping? Here is the easiest (and tastiest) one we’ve tried.

Ingredients

  • 1.5kg of diced casserole beef
  • 2 large carrots sliced
  • 4 sticks celery sliced
  • 1kg baby potatoes
  • 2 tablespoons worstershire sauce (it is okay to slip a bit when adding this if you like it a bit saltier)
  • 1 tub tomato paste
  • Good bit of crushed garlic
  • 1 litre beef stock
  • Cup red wine, nothing fancy
  • A few bay leaves
  • 1 onion chopped
  • 1 tablespoon oil

Method
1.) Preheat camp oven while preparing
2.) Combine beef, onion, carrot, celery, garlic, potatoes and bay leaves
3.) Combine worstershire sauce, tomato paste, red wine and half of stock
4.) Add beef mixture and stir

5.) Place on fire on a medium to low heat until it simmers and then keep at a low temperature for 4 to 5 hours (it works best to use a tripod over the fire for this recipe) and stir every hour or so. Add more stock as needed.

6.) As you approach the 4 to 5 hour mark half remove the lid of the camp oven to help it reduce further (this will make the sauce nice and thick)
7.) Serve with bread, damper, rice or whatever you have on hand

This isn’t the prettiest meal but it is super tasty and very easy to cook if you don’t want to spend much time cooking. This one is always a winner on our camping trips!
